Ingredients

Base

1 scoop of Coconut Protein Whey or Pea Protein Blend

10-12 medjool dates (pitted)

1 cup of  walnuts (soaked overnight or for a  minimum 2-4 hours)

3 tbsp of coconut oil (melted)

1 tbsp of cacao nibs

Cherry Filling

2 cups of fresh cherries (pitted)

1 cup of raw cashews (soaked overnight or for a minimum 2-4 hours)

3 tbsp of coconut oil  (melted)

1 tbsp of shredded coconut

Chocolate topping

1/4 cup of raw cacao powder

1/4 cup coconut oil (melted)

2-3 tbsp of maple syrup (organic)

2 tbsp of cacao butter melted

Method

Base

Blitz all ingredients in a food processor, ingredients should stick together. Then press into a lined  rectangle slice tin and place in freezer to set.

Cherry Filling

Blitz cashews in the food processor until they are broken down. Add the coconut oil, shredded coconut and pitted cherries.  Blitz together until you get a smooth consistency. Scape down sides of food processor to ensure all ingredients are mixed well. When mixture is smooth (It should have a bit of texture due to the cashews and shredded coconut) Spread filling onto the base evenly. Put back into the freezer to set for a few hours.

Chocolate topping

Melt cacao butter, combine with melted coconut oil, cacao powder and maple syrup. Simply stir together in a bowl until chocolate mixture  becomes smooth. Spread evenly over the cherry filling. Sprinkle raw coconut on top.

Place back into the freezer to set for 2-4 hours. When set remove cut into squares or rectangles.

Place any left overs in freezer for easy access to a healthy treat.
