Shakti Protein Balls

I had the pleasure of catching up with Shakti AKA as “The Holistic Chef” a few weeks back. Shakti has worked as an international and private chef for over 10 years. Her passion is to create healthy food that energises her client, helps them gain more vitality and lives to the fullest!!  Some of Shakti’s special talents include Menu Planning, Public and Private workshops and Pantry makeovers.

 

Shakti has also formulated a “Greens Superfood Blend” This blend is a 100% Natural complete superfood greens powder, high in vitamins and minerals. All ingredients are consciously sourced for maximum energy and vitality. It can be added to fresh juice, water or in your favourite smoothie. 

I was feeling adventurous and added it to a batch of protein balls. These are great to take travelling or to leave in the fridge for a healthy energising snack!

Ingredients

2 cups of activated almond (soaked over night, rinsed and drained)

2 scoops of Coconut Whey or Pea Protein Blend

11 medjool dates (seeds taken out)

1/2 cup of sunflower seeds

1/2 the juice of a lemon

1-2 teaspoons of Shakti’s Superfood Greens

1 1/2 tablespoons of melted coconut oil

1/3 cup of shredded coconut to roll balls in

 

 

Method

Blitz almonds in food processor until you get a chunky meal texture.

Add all other ingredients except shredded coconut and blitz until fully combined.

Ingredients should stick together.

Roll into balls covering with the shredded coconut.

Place in an airtight container and store in the fridge.
