Spicy Tomato Soup

I am a huge fan of homemade soup in the cooler months. There is nothing more comforting on a cold night digging into a comforting bowl of soup. A lot of soups can be a little time consuming, there can be a fare bit of preparation involved when using natural produce. This is why I love this simple  but tasty recipe.

Serves 6-8


What you need….

1 – 1/2 kilos of Roma tomatoes (any type of tomatoes is fine)

1 leek

4 onions

2 cloves of garlic

1 small red chilli or chilli flakes

1-2 zucchinis

1 tbsp of organic vegetable stock

1-2 litres of water ( this will depend on desired consistency)

1 tbsp of coconut oil


What you need to do….

Wash and chop all vegetables into chunks. 

In a large pot fry onion, garlic, chilli and leek in coconut oil until soft.

Add remaining vegetables and stock, stir and add water. Boil for approx 2-5 min.

Place lid on pot and simmer for 30 – 40 min.

Take off heat and let cool little. Puree in blender until smooth.

Season with salt and pepper. Add a dollop of coconut cream for extra creaminess.

For the non vegetarians, vegan you can to add organic bacon or  bacon bones to the recipe.
