Quinoa, Kale and Goji Berry Salad

 If your looking for a tasty, simple Superfood jam packed salad that the whole family will enjoy you have to try this one. Its perfect for the holiday season.

What you need

  • 1 cup of Quinoa ( can be omitted if following a grain free diet) 
  • 1/2 cup of Goji Berries 
  • 1 large bunch of curly or flat leaf Kale 
  • 1/2 cup toasted pine nuts 
  • 1/2 cup toasted pepitas 


  • 4 tablespoons extra-virgin Olive Oil 
  • 1 1/2 tablespoons of Apple cider vinegar 
  • 1 1/2 teaspoons Dijon mustard 
  • 1 clove of freshly mince garlic 

What to do

Boil 1 cup of quinoa in 2 cups of water for 10 minutes (seeds will sprout)
Remove from heat and place lid on until water is absorbed 
Fluff with fork to separated grains and leave to cool 
Remove stem, chop, wash and dry Kale
Soak Goji Berries in filtered water for 15 minutes ( this will soften them and bring out their sweetness)
In a large bowl combine all ingredients including toasted pine nuts and petitas
Add dressing and mix thoroughly with love and care. Ideal as a side dish for any meal.
