Protein Bar Recipe

2 cups of Chocolate or Coconut Protein Blend
1 cup coconut oil
1 cup tahini
1/4 cup rice malt syrup (optional for extra sweetness)
1/4 cup goji berries
1/4 cup organic sultanas
1/4 cup cacao nibs
1/4 cup shaved raw coconut
Place all ingredients except raw coconut into a food processor and blitz until combined. Ingredients should stick together.Add a dash of water if consistency is too dry.
Once combined place into a lined (line with baking paper or glad wrap) slice container or baking tray. Spread out evenly, press firmly into tray. Top with coconut and place in fridge to set for a few hours. Once set, remove from tray and cut into squares or rectangles.
These are perfect for lunch boxes or a guilt free snack.
