Overnight – Steel Cut Oats

Its that time of year again when the weather cools down and our bodies are longing for warm comfort foods. My kids love nothing more than a bowl of your traditional rolled oats with banana and honey.

I recently came across across “Organic Steel Cut Oats”  in the Supermarket, although not Gluten Free they are less processed than your traditional rolled oats read more here. This recipe is super easy as you can prepare the night before. The oats have a delicious nutty texture and taste great.

Serves 2

Ingredients

1/2 cup steel cut oats soaked overnight (I used Coles Macro organic brand)

1 tablespoon chia seeds

1  cup  filtered water (or enough to enough cover and soak the oats in)

2 tablespoons coconut cream

1 tablespoon coconut protein blend (optional for extra protein)

Method

Place oats and chia seeds in a bowl and cover with water. Stir through. Cover and place in fridge overnight.

In a hurry next morning heat in the microwave for approx 2 min.

If you have more time, place ingredients in a small saucepan, heat on the stove. Stir continuously. You may need to add more water for desired consistency.

Once heated through add the coconut cream or any type of milk and stir. Top with banana, berries, cinnamon or honey if you like it a little sweeter. I like to use bee pollen as shown in picture.
