NO CHEESE – CHEESY SAUCE WITH ZUCHINI NOODLES

No cheese needed for a cheesy sauce! This was a big hit a BBQ I recently hosted. It is so tasty and so good for you! No dairy or gluten.

INGREDIENTS

2 cups raw cashews (soaked in water to soften up to 4 hours until soft)

3 large fresh basil leaves

3/4-cup water

1/4-cup nutritional yeast (you can get from most health food stores)

2 tablespoons olive oil

1/2 juice of lemon

1 clove garlic

1-2 teaspoons Braggs seasoning or ( a dash of tamari suace)

1teaspoon sea salt

METHOD

Blend all ingredients in a high-powered blender or food processor until smooth. You may need to add more water to get the desired consistency. Always season to suit your taste buds!

Delicious on zucchini noodles, used as a dip, compliments any meat or vegetable dish.

 

ZUCHINI NOODLE SALAD

INGREDIENTS

4-5 small to medium zucchinis

1-cup cherry tomatoes sliced in half

1/4 cup toasted pine nuts

METHOD

Using a Julianne peeler or Zucchini noodle maker create raw zucchini noodles.

Gently stir in No Cheese – Cheesy Sauce, add tomatoes, pine nuts and garnish with fresh basil. Serve in a large bowl or platter. Store in airtight container in the fridge.
