Healthy Soup Recipe

 

Soup is an easy go to for me and my family in the cooler months. The bigger the pot the better, full of delicious vegetables and flavours! The possibilities are endless! Not only is soup good for you its inexpensive and goes a long way. I love you can use whatever is left in your fridge, which means no waste!

This blend was inspired by Ronaldo The Healthy Chef Immune Boosting Broth Recipe. Its a combination of all my very favourite flavours that I always have on hand. This can be used as a base for other soup recipes. You can add chicken or a lamb shank for a heartier version.

 

Ingredients

2.5  litres filtered water

1 leek washed sliced finely

1 onion chopped

3 medium potatoes peeled and diced

1/2 small broccoli and or cauliflower cut into small trees

2-3 medium zucchinis grated

2 cloves of garlic crushed

1 lemon or lime juiced

2- 3 thumbs of raw ginger grated

1 thumb of turmeric grated

3-4 sprigs of fresh rosemary

2 tablespoons coconut oil

1- 2 tablespoon sea salt (season to suit your tastebuds)

1 pinch of ground pepper

Method

In a large pot fry  leek, onion and garlic in coconut oil until softened.

Add remaining ingredients and filtered water.

Place lid on and cook on high until water starts to boil, turn heat down and simmer  for approximately 1 hour or until potato is soft (not mushy)

Season to taste. And serve warm. Store leftovers in fridge for a quick healthy snack or meal.
