Gluten free, high protein Vegetable Frittata

I am very lucky to have my mum come stay with us for a few weeks this month. I am super busy with “Think Vitality Nutrition” having her here takes the pressure off as she is a whiz in the kitchen and a organised genius when it comes to household duties! She whipped up one of my all time favourite frittatas, its great for breakfast, lunch and dinner, full of healthy vegetables and high in protein. Inspired by the amazing Jamie Oliver’s recipe from his “Save with Jamie “Cookbook. Enjoy!

3 cups of diced sweet potato
1 cup of diced Hawaiian sweet potato (white in colour)
8 free range eggs
2 cups of kale
1/2 cup of goats cheese
Pre-heat oven to 160-170 deg
Line baking tray with baking paper
You can bake your potatoes in a little coconut oil in the oven or simply steam them first.
Allow potatoes to soften and cool.
Crack eggs into a large bowl and whisk.
Add potatoes and kale and mix.
Pour ingredients into lined baking tray.
Sprinkle evenly with goats cheese.
Place in the oven for approximately 35-40min.
Check to see if cooked in by sticking a skewer or knife in the middle.
Serve straight away, or let cool and place in an airtight container in the fridge. Also great to freeze leftovers.
