This super easy paleo recipe originally appeared on The Merrymaker Sisters website, which is the creation of Emma and Carla, two sisters who are taking the paleo world by storm with their fun, energetic simple approach to cooking! We’ve made their yummy cookies numerous times and taken a huge amount of pleasure in enjoying a treat that is gluten free, high in protein, requires little preparation and tastes absolutely delicious! Recipe for Yummy, Healthy, Easy, Paleo ANZAC Bisuits (Think Vitality Nutrition Version)

The below instructions should make 10-12 biscuits. To make more or less, simply double or halve the quantities accordingly.

  • Paleo

What you need…

1/2 a scoop of Cinnamon Protein Superfood Blend
1 cup of almond meal
1 cup of shredded coconut (no additives)
1 cup of flaked almonds
1/4 cup honey
1/4 cup coconut oil
1 tsp. baking powder
1 tsp. water

How to do it…

Preheat oven to 120 degrees and line baking tray with baking paper.
In a large mixing bowl place almond meal, shredded coconut, flaked almonds Cinnamon Protein and mix together.

In a small pan melt the coconut oil and honey together. Take off the heat and add the baking powder and water, stir together until it foams and turns a white colour.

Transfer this into the dry ingredients and mix until combined.

Take tablespoons-full of the mixture, firmly roll into balls, place on baking tray and flatten.

Place the tray into the oven and bake for 35 minutes or until golden brown.

Allow to cool and harden before storing in an airtight container for up to 5 days. We’re sure they’ll all be gone by then though!
