Coconut Cauliflower Porridge

When I saw Kelly’s Cococauli De Crem Porridge recipe I was intrigued!l. I love making cauliflower rice. Its a fantastic gluten and grain free alternative and tastes yum! This is one you need to try, its a delicious, healthy breakfast alternative.

- Refined Sugar free
- High Protein
1 scoop (50g) of Coconut WPI or Pea Protein Superfood Blend
1/3 a head of cauliflower
1 can of coconut milk (I like to use Ayam brand as it has no filler)
1/2 cup of desiccated coconut
1-2 teaspoons of cinnamon
1 tablespoon of raw honey (optional)
Blitz the cauliflower and and coconut milk in a food processor or blender to make a puree.
Pour into a pot add the remaining ingredients, cook on a low to medium heat for approx 10-15 min. Continue to stir to avoid it sticking to the bottom of the pot.
Serve with your favourite nuts, seed or berries.
