Coconut and Almond Log

I love recipes that are not only easy but are versatile.This one is an extended version of my 2 minute Raw Muesli recipe . This Coconut and almond log can also be rolled into Bliss Protein Balls.  If your short of time simply roll into a log and slice.

What you need….

3/4 cup of Coconut Superfood Protein Blend

1 and a half cups of activated almonds (soaked overnight)

6-8 organic dried apricots (no sulphates)

1/4 cup of rice malt syrup (can use maple syrup or honey)

2 tablespoons of coconut oil

1/4 cup of shredded coconut

What you need to do…

Place all ingredients into a food processor and blitz until it combines. If it still feels a little dry, add some more coconut oil. Test by taking a small amount out and squeeze together in your hands. If it stays together its ready to roll.

Remove ingredients and place on a large piece of baking paper. Sprinkle with shredded coconut. Squeeze and shape into a log. Roll the baking paper around it, keep rolling with hands, pushing the ends in tight until you get it smooth and even. Unwrap and place into the fridge to harden for 10 min. Take out and cut into slices. Store in an airtight container in the fridge.
