Banana Protein Pancake Stack

I was inspired by my very direct friend today to get back in the kitchen! As many of you would know I wear many hats in this business. Its easy get bogged down in the everyday running of things. The creative fun stuff get pushed back. Food, nutrition, health is why I do what I do! Its my passion, its the inspiration behind ‘Vitality Nutrition”. Thank you to my dear friend for the reminder ….I had fun making these pancakes …they were soooo  good I ate all of them! No guilt because they were jam packed with natural, nutritious ingredients.

  • High Protein
  • Refined Sugar Free
  • Dairy free (When using pea protein blend)
  • Gluten and Wheat free
  • Makes approx 6 small pancakes
What you need…

2 free range eggs
2 ripe bananas
1 tablespoon of coconut cream (stored in the fridge overnight)
1teaspoon of organic honey or maple syrup (optional)
1 teaspoon of coconut oil
1 teaspoon of shredded coconut (to serve)

What you need to do….

Mash 1 banana in a bowl, add in eggs and mix together. 
Add Coconut Protein Superfood Blend and stir until you get a smooth consistency. 
Heat a non stick pan on high and add coconut oil. Spoon about 1/4 cup of mixture onto the hot pan. 
Cook for 2-3 minutes and then flip. Turn down the heat so not to burn. 
When you have made your batch, simply stack on a plate with slices of banana in-between each pancake. Top with whisked coconut cream, honey and dried coconut.

These are beyond yum!
