Bacon and Kale Muffins

What you need

2 rashers of organic / free range bacon chopped

1 onion diced finely

1 clove of garlic

2 cups of chopped kale

1 scoop of TVN Coconut  Pea protein powder or Whey protein powder

4 organic / free range eggs

2 tbsp macadamia nut oil

 

What to do

Pre-heat oven at 170-175 degrees

Grease muffin tray with butter or oil

Whisk eggs in a large bowl

Add all ingredients and mix until combined

Scoop with a spoon into muffin tray

Bake for 20-25 min in oven at 170-175 degrees
