Anzac Chocolate Cookies

Who doesn’t like Anzac biscuits? They are as Australian as Vegemite! These sweet delights are very similar to our Paleo Anzac Biscuits. They have a Chocolate Twist to make them extra delicious. You can make them with any of our Protein Blends. I have used Coconut WPI, but would be just as tasty with our Cinnamon or Chocolate Blends.

- No refined Sugars
- Dairy Free when using (Pea Protein Blends)
1 scoop WPI Protein Blend Coconut
1 cup almond meal
1/2 cup desiccated coconut (no sulphates or preservatives)
1/4 cup slivered almonds
1/4 cup of organic maple syrup
1/4 cup coconut oil melted
1 tea spoon baking powder
Pre- heat oven to 120 deg, line baking tray with baking paper
Place all dry ingredients into a large bowl and mix together. Add maple syrup and melted coconut oil. Mix together until combined.
Roll into small balls and flatten out on to baking paper. Leave space between each one.
Bake in over for approx 30 minutes or until golden brown. Place on rack to cool.
1/3 cup cacao butter melted
1/3 cup organic rice malt syrup (test sweetness)
1/4 cup cacao
Place all ingredients into a small bowl and stir together until you get a smooth consistency.
Spoon onto Anzac Cookies and place in the fridge to set.
Store in airtight container in fridge.
