Banana Bread Recipe

I am the first to admit I am not a baker! Raw food treats thats my where my mojo lies. So you can imagine how pleasantly surprised my kids were when my very first attempt at making “Superfood Banana Bread” turned out so delicious!
- Gluten Free
- Refined Sugar Free
- High protein
1 scoop VN Coconut Pea protein powder or Whey protein powder
1/4 cup of coconut flour
3 ripe bananas
8 Medjool Dates (seeds removed)
2 Tbsp. tahini
4 – 5 free range eggs
1 tsp. bicarb soda (Gluten Free)
2 tsp cinnamon
Pinch of Sea Salt
Preheat oven to 175-180 degrees.
Grease and line loaf tin (I use coconut oil).
Mash the bananas and dates together until smooth.
Stir in the rest of the ingredients and mix together until you have a smooth batter.
Pour batter into loaf tin and bake between 175-180 degrees for 45minutes. Check its cooked through with a skewer.
Once cooled store in an airtight container. Simply eat on its own or spread on your favourite topping!
