Red Velvet High Protein Cupcakes

What you need…

2 large raw beetroots grated
60g of  “Think Vitality Nutrition” Coconut Protein Superfood Blend 
2 eggs


1 and a half cups of almond meal

1/4 cup of natural cocoa powder
1/4 cup of honey or maple syrup
1/2 a cup of raisons or prunes (nitrate free)


3 tablespoons of coconut oil

1 teaspoon of vanilla paste or extract
1 teaspoon of ground cinnamon
1 pinch of himalayan sea salt


1 teaspoon of gluten free bicarb soda


What you need to do…

Preheat Oven to 180C (fan forced)

Combine all ingredients in a food processor or mixing bowl combine until you get a smooth batter. Spoon into a lined cupcake or muffin baking tin. Bake for aprrox 40-45 minutes. Check as to not overcook. Remove from oven and allow to cool in tin. Yum!!
